I really hope you end up making this into a full game, this is very well made and the ideas you have for it are interesting and separate it from other Punch Out inspired games.
I am a huge Punch Out fan, so this is fun to see. It feels very close to it in the timing and movement, nice work on that. The art style is really cool too. What I would love to see (or hear about) is what else you intend to differentiate it from Punch Out a bit more. (just spitballing ideas, but like an item shop or something to buy weapons, armor, or a leveling system with XP... different characters to play as?... warrior, wizard, rogue.)
You can read it on the design document for the gamejam, but I want to add some roguelite elements of powering up as you face tougher monsters. However, I'm not sure if I have time to implement those for the jam... trying to get one fight as polished as possible before moving on. Fighting monsters instead of humans gives a lot of room for creative fights too!

would be cool fighting Tiamat, or any 5 head dragon with a different moveset for each head

adding some variety may be good; I was able to win by just ducking any punches. I didn't have dodge left/right at all.
